Sandra’s Coconut & Lime Double Drizzle Cake

sandra 2Have a go at making Sandra McGarry’s decadent and luscious Coconut & Lime Double Drizzle Cake. Bursting with flavour – this one is sure to impress your family and friends!


  • 2lb loaf Tin
  • Bowl
  • Greaseproof Paper
  • Hand mixer (if no mixer, mix by hand)


Cake batter:

  • 10 oz. / 285g Self Raising Flour
  • 10 oz. / 285g Caster Sugar
  • 5 large Eggs
  • 10 oz. / 285g Softened Butter
  • Juice and rind of two limes
  • 3oz /85g of Desiccated Coconut

Lime Syrup:

  • Juice of 1 lime
  • 2 oz. / 55g caster sugar

Lime Icing:

  • Juice and rind of 2 limes
  • 2 oz. / 55g icing sugar


  • Preheat oven to 160 degrees (fan)
  • Fully grease your loaf tin with some butter and add a teaspoon of flour and tip around the tin until the tin is fully coated with the flour
  • Put a layer of greaseproof paper at the bottom of the tin
  • Cream the softened butter and caster sugar until pale in colour and creamy
  • Slowly add in one egg at a time until all eggs are incorporated
  • Slowly add in the sieved flour by hand
  • Fold in gently until all mixed
  • Finally add in the juice, rind of the two limes and the coconut and stir
    Pour the cake batter in the loaf tin and put in middle shelf of oven, bake for 45 to 50 minutes at 160 (fan oven)
  • While cake is baking make the lime syrup
  • Add the juice and rind of one lime and 2 oz. of caster sugar
  • Stir together until sugar is dissolved
  • Leave to sit while waiting for cake to cook
  • Cake is cooked when risen and firm to touch… If you have a cake tester, check with that to see that the middle is cooked, if not use a thin knife and insert into the middle of the cake, if it comes out clear it is cooked
  • While cake is still in loaf tin, put some small holes into the cake and pour over your lime and sugar syrup slowly until it is all soaked into the cake
  • Leave to cool. After 20 minutes remove from tin and put on cake rack. Leave to go cold.
  • To make the lime icing, add the juice of 2 limes and 2 oz. of sieved icing sugar. Stir until it becomes like a sticky paste.
  • Drizzle over the loaf cake
  • If you like you can toast 1oz of coconut and sprinkle that over the finished cake
