Makes: 12 cupcakes

175g self raising flour

110g caster sugar

1 tsp baking powder

Pinch of salt

2 large eggs

110g soft butter, cut into small pieces

1/2 tsp vanilla extract

50ml milk

Sprinkles, to mix through

For the frosting:

275g icing sugar, sifted

150g butter, softened

1/2 tsp vanilla extract

30ml milk


  1. Preheat oven to 180°C/Gas 4 and line the bun tray with paper cases.
  2. In a large bowl, combine all the dry ingredients. Make a well in the centre of the bowl then break in the eggs and add the butter & vanilla extract. Using an electric hand mixer, beat all the ingredients together until combined. Pour in the milk and beat again until combined. Fold in the sprinkles.
  3. Divide the batter evenly among the paper cases and bake in the oven for 15-20 minutes or until firm and light brown on top. Leave to cool.
  4. For the frosting, beat the ingredients together in a bowl with the hand mixer.
  5. Using two spoons or a piping bag, ice your buns and sprinkle over with decorations of your choice!
