Gem’s Delicious Fruit & Nut Bar Recipe

What you need:

175g Chopped Nuts

70g Gem Gourmet Raisins

130g Gem Gourmet Chopped Dates

70g Gem Gourmet Diced Apricots

55g Milk Chocolate Chunks

45g Plain Flour

1/8 tsp Gem Bread Soda

1/4 tsp Salt

65g Gem Light Brown Sugar

1 Large Egg

1/2 tsp Vanilla Extract

What to do:

1.       Preheat your oven to 160°C. Line a 20 cm square baking pan with parchment paper.

2.       In a large bowl, combine the chopped nuts with the dried fruit and chocolate chips. Then add the flour, bread soda, salt, and sugar and stir until all the fruit and nuts are completely coated in the flour mixture.

3.       In a separate bowl, beat the egg and vanilla until light coloured (this will take a few minutes). Add the egg mixture to the fruit and nut mixture and mix until all the fruit and nut pieces are completely coated with the batter. Place the mixture into your pan, pressing to compact the batter.

4.       Bake for 35 to 40 minutes, or until the batter is golden brown and is just starting to pull away from the sides of the pan.

5.       Remove from oven and place on a wire rack to cool. Using the parchment paper, lift the bake from the pan and cut into squares or bars.
