Aimee Louise Fenton, one of our little patients has kindly allowed us to share her recipe for ‘mini buns with icing’.
Aimee Louise travels from Cork four times a week to attend our Renal Outpatients Unit for dialysis. It is hoped the money raised from the Great Irish Bake will help redevelop this unit into a world class facility for patients attending Temple Street for dialysis treatment. Our Great Irish Bakers will play an important role in making this a reality.
Makes 36 mini square/ 24 mini round or 12 regular sized buns.
110g (4oz) Unsalted Butter, softened.
110g (4 oz) Caster Sugar
2 Eggs, room temperature & lightly beaten
¼ Tsp Vanilla Essence
140g (5 oz) Plain Flour
¼ Tsp Baking Powder
Preheat oven to 180c/375f/Gas mark 5
Sieve together the flour & baking powder and set aside. Cream the butter for a few minutes & gradually add the sugar and beat until light and fluffy. Gradually beat in the whisked eggs & vanilla essence. Beat well between each addition. If mixture looks a little curdled, add 1 tablespoon of the flour. Gently fold in the remaining flour. These can also be made using the all-in-one method by placing all ingredients into a food processor and whizzing up until just combined. Spoon mixture into the bun cases to ¾ full. The mini buns take 8-12 minutes, depending on your oven. The regular buns take 18-22 minutes. Allow to cool on a wire rack.
110g (4 oz) Sieved Icing Sugar
2 – 4 Tablespoons Boiling Water
Food Colouring of choice (optional)
Blend water gradually into the icing sugar to form a paste. Add a couple drops of food colouring if using and mix well. When buns have cooled, cut in half horizontally. Sandwich each bun with jam or butter-cream and top with icing or simply dust with icing sugar. Delicious!
These are also delicious made in chocolate. Swap the vanilla essence for coffee essence or made up instant coffee using 1 Tsp of coffee powder to 1 Tblspn of hot (not boiling!) water and add 50g (2 oz) of Cocoa Powder to the flour before sieving all together. Sandwich together using chocolate butter-cream and coat in melted chocolate for an extra special treat!!. You can also decorate the buns with mini smarties, sprinkles, chocolate buttons, jelly tots, etc… Or, you could add fruit such as sultanas or chocolate chips to the vanilla mix for a different treat. The mini cakes are the perfect size for little hands to hold. The main thing is to have fun baking them & better fun eating them. ENJOY!!!
